1.Using a sharp knife, score squid hoods and cut into 4cm squares. Dry well on paper towel. In a small bowl, combine salt, pepper, five spice powder and Sichuan pepper. Add half to cornflour in a medium bowl.
2.Heat oil in a deep saucepan on high, until a cube of bread sizzles as soon as it is added to the oil.
3.Dip squid into egg-white, then toss in the flour mixture, shaking off excess. Deep-fry in 3-4 batches, for 1-2 minutes each, until golden. Remove with slotted spoon. Drain on paper towel. Sprinkle with remaining spice mix.
4.In a small jug, whisk juice, oil, fish sauce and sugar together. In a serving bowl, toss all salad ingredients together with dressing. Serve calamari with salad and sweet chilli sauce.
