1.Heat butter and oil in a large frying pan on high.
2.Cook pork 2-3 minutes each side, until golden brown. Remove from pan. Set aside, loosely covered in foil, to rest.
3.Add sugar and spices to pan, stirring. Toss apple through mixture 1-2 minutes, until tender and caramelised. Return pork to pan; heat through.
4.Meanwhile, to make couscous, in a large heatproof bowl combine couscous, juice and butter. Cover; set aside 5 minutes. Fluff with a fork to separate grains. Stir chickpeas and parsley through. Season to taste.
5.Serve pork and apple sauce on a bed of couscous.
