Method

1.Preheat oven to 210°C/190°C fan forced. Line a iarge baking tray with baking paper.
2.Place kumara in a large microwave-Safe bowl. Cover kumara with plastic food wrap. Microwave on High (100%) for 5-6 minutes or until tender. Stand for 5 minutes. Mash.
3.Meanwhile, heat oil in a large frying pan over moderate heat. Add onion; cook and stir for 4-5 minutes or until softened slightly. Add garlic and spice mix to pan; cook and stir for 1 minute or until fragrant.
4.Increase heat to high. Add mince; cook, stirring with a wooden Spoon to break up lumps, for 5 minutes or until browned.
5.Add mince, currants and coriander to kumara. Season with salt and pepper. Divide mixture into 12 portions.
6.To make a triangle, place a sheet of filo on a clean work surface. Spray with oil. Fold into thirds, lengthwise, to form a long thin rectangle.
7.Spoon a portion of lamb mixture onto one end of rectangle. Fold, shaping into a triangle. Place on prepared tray; spray with oil.
8.Sprinkle with sesame seeds. Bake for 12-15 minutes or until cooked and golden.
9.Whisk extra coriander and yogurt in a bowl. Serve triangles with yogurt mixture and tabouli.

To prevent pastry drying out, keep covered with a tea-towel while working.
