Method
1.Steam kumara and mash well in a bowl. Add chopped coriander, garlic and cumin. Season to taste.
2.Spread kumara mixture evenly over 4 flour tortillas. Sprinkle feta evenly between each. Top each with a second tortilla.
3.In a large frying pan, heat oil on medium. Cook quesadillas 1 minute each side, until crisp.
4.Drain on paper towel. Repeat adding more oil as required. Cut into quarters and serve with a spinach salad.
Pumpkin can be used in place of kumara.
