Method
1.Place chicken on a plate. Sprinkle with spice mix; turn to coat. Cover with plastic food wrap; chill 15 minutes.
2.In a large frying pan, heat one tablespoon of oil over moderate . Add pumpkin; cook and stir 5-8 minutes or until tender. Remove and set aside. Add chicken to pan; cook and stir 5-6 minutes or until cooked.
3.Meanwhile, place couscous in a medium heatproof bowl; stir in boiling stock. Cover with plastic food wrap; set aside 5 minutes or until liquid is absorbed. Using a fork, fluff and separate grains.
4.Drizzle couscous with remaining oil. Add pumpkin, asparagus and coriander. Using a fork, stir gently; season with salt and pepper. Spoon couscous onto plates. Top with chicken; serve at once with lime wedges.
To blanch asparagus, cover with boiling water in a heatproof bowl; stand 2 minutes. Refresh under cold water; drain.
