Method
1.Cook spaghetti in a large pan boiling, salted water according directions. Drain and return to pan.
2.Meanwhile, place tofu, coriander, parmesan, garlic and oil in a food processor and process until smooth. Season to taste.
3.Add two-thirds of coriander sauce and tomatoes to spaghetti and toss well on low heat until warmed through. Serve spaghetti with dollops of remaining sauce.
Use the whole bunch of coriander, including leaves, stalks and roots. Try this sauce with basil or mint instead of coriander, and use it as a low fat dressing for salads, too.
