Method
1.In a bowl, combine chia seeds and water. Set aside for 30 minutes until all the water has been absorbed.
2.Add mince, half the basil, carrot, Worcestershire sauce, egg, shallots and garlic to chia. Season and stir well, then roll mixture into 24 balls.
3.In a saucepan of boiling water, cook pasta according to packet instructions. Drain and keep warm.
4.In a frying pan, heat oil on high. Cook meatballs in three batches for 3-4 minutes each, stirring until browned.
5.Return all meatballs to pan. Add pasta sauce and broccoli. Bring to the boil, then reduce heat to low. Simmer, covered, for 4-5 minutes until meatballs are cooked through and broccoli is tender. Stir in parmesan and remaining basil.
6.Serve meatballs on a bed of spaghetti, topped with basil leaves, accompanied by salad.
Squeeze carrot before adding to the mixture to remove any excess moisture.
