Method
1.Thread pork, pineapple, capsicum and onion onto 8 skewers. Place in a glass dish.
2.Combine sauce and sugar in a small bowl; pour over skewers, turning to coat. Cover with plastic food wrap; chill 15 minutes.
3.Meanwhile, to make vegie rice, heat a wok over moderately high heat. Add oil; swirl to coat base and sides. Stir-fry vegetables 4 minutes, or until hot. Add rice: stir-fry 3 minutes, or until hot. Add sauce to taste.
4.Heat a large frying pan over moderate heat. Spray skewers with oil. Cook and turn skewers, in batches, 5 minutes each batch, or until browned and cooked.
5.Spoon rice onto plates. Serve with skewers and lemon wedges.
You will need to soak skewers in cold water for 20 minutes prior to preparing to prevent scorching. You can use chicken or firm white fish fillets. You need to cook 1 1/2 cups white long-grain rice a day ahead.
