Method
1.Soak noodles in boiling water in a large heatproof bowl for 5 minutes; stir to separate strands, then drain. Heat a wok or large frying pan over high heat. Add 2 teaspoons of the oil; swirl to coat surface. Stir-fry garlic for 30 seconds or until fragrant. Transfer garlic to a bowl.
2.Add 2 teaspoons of remaining oil to wok. Stir-fry beef in batches for 2-3 minutes or until seared. Transfer to a heatproof bowl.
3.Heat remaining oil in wok. Add onion, carrot and capsicum; stir-fry for 2-3 minutes or until vegetables are tender.
4.Return beef with soy sauce, mirin and sesame oil; toss for 3-4 minutes or until heated. Add bok choy; stir-fry for 30 seconds or until just wilted. Add noodles; toss until combined and heated.
5.Spoon into shallow serving bowls. Sprinkle with sesame seeds. Serve at once.
You will find liquid mirin seasoning in the food aisle of the supermarket, or at specialty Asian grocers. You can use sweet sherry instead.
