Method
1.Soak rice in cold water for 30 minutes. Line a baking tray with paper towel, Drain rice and spread over prepared tray.
2.Place mince, onion, ginger, garlic, soy sauce and oil in a large bowl. Using damp hands, mix until well combined. Roll mixture into 12 balls. Roll each ball in rice to coat.
3.Place balls, in single layer, in a bamboo steamer basket. Cover with a tight-fitting lid. Place over a pan of simmering water. Steam for 10-12 mins, until rice is tender and pork cooked. Cool slightly.
4.Thread one ball, mint leaf and a tomato half onto a skewer. Repeat to make 12 skewers in total.
