Creamy dressing

Method

1.To make dressing, whisk together all ingredients in a small bowl. Season to taste.
2.Remove skin and bones from trout. Flake trout into bite-size pieces and place in a large bowl. Add cucumber, dill and half of dressing. Toss gently to combine.
3.Place radish, watercress and chives in a separate bowl. Add remaining dressing and toss to combine. Add trout mixture and toss gently. Serve salad topped with extra dill.
