Method

1.Finely grate rind from lemon (1 teaspoon); juice lemon (2 tablespoons). Combine cheese, chives, rind and juice in small bowl. Season to taste.
2.Trim asparagus. Heat oil in medium frying pan; cook asparagus until tender.
3.Top asparagus with smoked salmon; serve with herbed ricotta.
