Waitangi Day is a great chance to head out for a picnic with the family – and this is a tasty recipe if you don’t have any luck catching kaimoana of your own!

Ingredients

Method

1.Heat oven to 200°C.
2.Toss kumara in 1 tablespoon olive oil. Season with salt and pepper, then roast for about 20 minutes until golden brown.
3.Place pastry in a pie tin, joining where needed. Trim edges to fit. Line pastry with baking paper and fill with baking weights or dried beans. Bake blind for 10 minutes. Remove weights and paper from tin and set aside.
4.Gently fry onion in olive oil until soft and translucent.
5.Whisk together eggs and cream, then season.
6.Place roasted kumara in prepared pastry shell, then top with salmon, onion and chives. Pour over egg mixture.
7.Cook pie for 25 minutes or until filling is set.
