Method

1.Place eggs in a saucepan of cold water. Bring to boil on high. Reduce heat to low and simmer for 5-6 minutes. Cool under cold running water in pan. Remove, peel and halve eggs. Set aside.
2.In a large bowl, combine rocket, salmon, beans, avocado and onion. Toss well.
3.In a jug, whisk together olive oil, vinegar and baby capers. Season to taste. Drizzle dressing over salad. Toss gently.

Canned tuna or salmon would also work in this salad.
