1.Soak noodles in boiling water in a large heatproof bowl for 2 minutes; stir to separate strands, drain.
2.Heat half the oil in a large frying pan over moderate heat. Add sausages; cook and turn for 5-8 minutes or until browned and cooked. Remove from pan; slice thickly.
3.Add remaining oil to pan. Add onion, carrot, celery and capsicum; cook and stir for 3 minutes or until onion is soft. Add curry powder; cook and stir for 30 seconds or until fragrant.
4.Return sausage to pan. Add soy sauce, stock, sugar, sprouts and noodles. Toss for 1-2 minutes or until heated. Serve topped with coriander.
Replace fresh noodles with dried vermicelli. Blanch sausages first for even cooking.
