1.Preheat oven to hot 200°C. Lightly grease a 23cm springform pan.
2.Heat oil in a large frying pan on medium. Sauté‚ onion for 3-4 minutes until tender.
3.Blanch silverbeet in a saucepan of simmering water for 20 seconds. Transfer to a bowl of cold water. Drain on paper towel.
4.Microwave potato on high (100%) power for 5 minutes. Mix with silverbeet, onion, ricotta, feta and eggs. Season to taste.
5.Cut filo in half lengthways. Brush with melted butter. Line prepared pan with filo, stacking it to form a star shape.
6.Sprinkle breadcrumbs over the filo base. Fill with silverbeet mixture. Fold edges of filo in towards the centre. Bake for 40-45 minutes, until firm and golden. Serve with salad.
