Dipping sauce
1.Combine ingredients in a small bowl.

2.Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place egg in a small bowl. Combine breadcrumbs and parmesan in another bowl. Place fish and flour in a large, resealable, food storage bag. Twist bag to secure; shake gently to coat fish evenly in flour.
3.Dip fish in egg, letting any excess drain off. Toss in breadcrumb mixture to coat lightly. Place fish on prepared tray in a single layer. Cover with plastic food wrap; chill for 15 minutes.
4.Arrange calamari and wedges on a baking tray. Bake for 20-25 minutes or until golden and cooked.
5.Meanwhile, spray fish with oil. Bake for 10 minutes. Turn fish; bake for 10 minutes more or until golden and cooked. Make Dipping Sauce as recipe directs.
6.Serve fish, calamari and wedges in baskets or bowls with Dipping Sauce and lemon.
Dipping Sauce Makes 1 cup For a better crumb, chill fish fingers before cooking. Process 3-4 slices wholegrain bread for this recipe. Add 1 tablespoon Worcestershire sauce if you like.
