Ingredients

Method

1.Heat oil in a large, deep frying pan on high. Cook sausages for 5-6 minutes, turning until browned all over. Cut into thick slices.
2.Saute capsicum, salami, onion and garlic in same pan for 4-5 minutes, until onion is tender and golden.
3.Add rice, paprika and saffron. Cook for 1 minute. Return sausages to pan with stock. Bring to the boil on high. Reduce heat to low. Simmer, without stirring, for 20-25 minutes, until rice is tender. Sprinkle with tomatoes and parsley.
