Sausage kofta with rice and yoghurt

These caseless sausages are coated in a lightly spiced yoghurt and baked under a grill. Serve them with tomato and cucumber-laced rice

Sausage kofta

1.Heat a small frying pan over moderate heat. Add spices; cook and stir 30 seconds or until fragrant. Transfer to a large shallow heatproof bowl. Add yoghurt and juice to spices; stir to combine. Season.
2.Preheat an oven-grill to high. Line a baking tray with foil. Thread sausages onto skewers. Roll sausages in yoghurt mixture; place on prepared tray. Grill 10 minutes, turning occasionally, or until cooked.
3.In a medium bowl, combine cucumber, tomato, garlic and rice. Serve with rice and extra yoghurt.

Cevap is a grilled dish of minced meat, a type of skinless sausage, found traditionally in the countries of southeastern Europe.
