Sausage fried rice

1.Heat a wok or large frying pan over high heat. Add 1 teaspoon of the oil; swirl to coat surface. Add egg and tilt to cover base. Cook for 1 minute or until set underneath. Turn; cook for 30 seconds. Transfer to a chopping board. Slice thinly.
2.Heat remaining oil in wok over moderately high heat. Add sausage; cook for 4 minutes or until browned. Add bacon; cook for 2 minutes or until sausage is cooked and bacon is crisp. Transfer sausage and bacon to a heatproof bowl. Slice sausage thinly.
3.Reheat wok over moderately high heat. Add vegetables and ginger; stir-fry for 5 minutes or until veggies are tender. Add rice, soy sauce, sausage, bacon and omelet to wok; stir-fry for 1 minute or until heated. Serve sprinkled with onion.

Cook 1 1/3 cups jasmine rice ahead of time, instead of using packaged microwave rice. Use Chinese pork sausages instead of chicken sausages. They’re available in the Asian food aisle and Asian grocery stores. You’ll find diced bacon in the deli section. Gluten free: Simply use gluten-free sausages and gluten-free soy sauce. Always read labels carefully.
