Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 30 x 20cm (base measurement) ovenproof dish.
2.Spray sausages with oil. Heat a large frying pan over moderate heat. Cook sausages, turning, 4-5 minutes, or until cooked. Cut into bite-sized pieces. Place in a large bowl.
3.Combine capsicum, beans, 2/3 cup cheese and half the coriander with sausage.
4.Place tortillas on a flat surface. Spoon sausage mixture evenly along centre of each tortilla. Roll up to enclose filling.
5.Place tortillas, seam side down, side by side in prepared dish. Spray with oil; top with remaining cheese. Bake 8-10 minutes, or until cheese melts.
6.Combine sour cream, chilli sauce and remaining coriander in a small bowl. Cut fajitas in half; top with sour cream mixture and tomato. Serve at once with salad.
Char-grilled vegies are sometimes cheaper at the deli counter.
