1.Preheat oven to 180°C/160°C fan forced. Grease and line base and side of a 20cm (base diameter) round springform pan with doubled baking paper, extending 4cm above rim. Cook potato in microwave, as packet directs. Cool.
2.Meanwhile, heat oil in a large frying pan over moderate heat. Add sausages and onion; cook and turn for 5 minutes or until sausages are browned. Transfer sausages to a heatproof plate. Transfer onion to a medium bowl. Cool sausages; cut in half lengthwise.
3.Add tomato, parsley and basil to onion in bowl. Stir to combine. Place 2 tortillas over base of prepared pan. Top with a third of the sausage, a third of the potato, a third of the tomato mixture and a quarter of the cheese. Top with 1 tortilla, a third of the sausage, half the remaining potato, half the remaining tomato mixture and a third of remaining cheese. Repeat layer once more, finishing with a tortilla. Sprinkle with remaining cheese. Place on a baking tray. Bake for 15-20 minutes or until golden brown. Stand for 10 minutes. Serve with salad.
You can use sausage of any flavour.
