1.Cook noodles in a large saucepan of boiling water according to packet directions. Drain; rinse under cold running water. Drain well; place in a large shallow heatproof serving bowl. Add celery and onion; toss to combine.
2.Meanwhile, combine vinegar, soy sauce, ginger and oil in a small jug.
3.Preheat a barbecue flatplate or large char-grill pan over moderately high heat. Add sausages and capsicum; cook and turn for 6-8 minutes or until browned and cooked. Transfer sausages to a heatproof board; thickly slice diagonally. Add sausage, capsicum and dressing to noodle mixture in bowl; toss to combine. Serve salad warm, sprinkled with basil.
