Method
1.Soak noodles in boiling water in a heatproof bowl 10 minutes. Stir to separate strands; drain. Return to bowl.
2.Meanwhile, heat oil in a deep-frying pan over moderately high heat.
3.Add mince; cook, stirring to break up lumps, 5 minutes, or until browned. Add garlic and onion; cook, stirring, 2 minutes, or until almost soft.
4.Reduce heat to low. Add satay sauce and coconut milk; cook, stirring, until mixture is smooth. Add vegetables; cook, stirring occasionally, 5 minutes, or until just tender.
5.Add noodles; toss together until combined and heated. Serve sprinkled with coriander and peanuts.
We used a fresh stir-fry vegetable mix of broccoli, red cabbage, carrot, zucchini, snow peas, onion and red capsicum. You can choose any vegetable mix.
