Method

1.Cook spaghettini in a large saucepan of boiling, salted water according to packet directions. Drain.
2.Meanwhile, heat 1 tablespoon of oil in a frying pan on medium. Add sardines, toss gently, 2-3 minutes, until heated through. Remove from pan.
3.Heat another tablespoon of oil in same pan and cook breadcrumbs, garlic and chilli, 1-2 minutes, stirring, until golden.
4.Gently toss two-thirds of sardines with breadcrumb mixture, lemon rind, parsley, parmesan and remaining olive oil. Mix through spaghettini. Top with remaining sardines and parsley leaves to serve.
