Caper mayonnaise
Method
1.Cook potatoes in a saucepan of boiling water, 15-20 minutes, until tender. Drain well.
2.Mash with butter until almost smooth. Season to taste. Add breadcrumbs, salmon, green onions, egg, lemon zest and juice. Mix well. Allow to cool slightly.
3.For caper mayonnaise, mix mayonnaise, sour cream, chopped capers and chopped dill, until combined.
4.Shape rissole mixture into 8 oval patties. Roll in flour, shaking off excess. Heat vegetable oil in a large frying pan on high.
5.Cook patties in batches, 5-6 minutes each, turning once, until golden and heated through. Drain on paper towel.
6.Serve salmon rissoles with caper mayonnaise, accompanied by salad, if you like.
