Salmon patties with horseradish mayo and rocket salad
Rocket salad
Method
1.Place potatoes in a medium-sized saucepan; cover with cold water and bring to the boil. Boil for 10 minutes or until potatoes are tender when pricked with a fork. Drain, then return to pan. Mash.
2.Add salmon, onion. dill and egg to mashed potato. Shape mixture into 4 patties. Coat in breadcrumbs. Refrigerate for 15 minutes. Meanwhile, combine horseradish cream and mayonnaise in a small bowl.
3.In a medium frying pan, heat 1 tablespoon of the oil over moderate heat. Add patties; cook for 5 minutes each side, or until heated and golden brown.
4.To make rocket salad: combine rocket, cucumber and tomato. Combine juice and remaining oil. Season with salt and pepper. Pour over rocket mixture; toss to combine.
5.Divide rocket salad among 2 serving plates. Top with patties. Spoon horseradish mayonnaise over patties. Serve.
Use pink salmon or tuna instead of red salmon. You can use natural yoghurt instead of mayonnoise. Serve patties worm or cold.
