Ingredients
500 gram potatoes, peeled, halved
30 gram butter
1/4 cup (60ml) hot milk
210 gram can pink or red salmon, drained, bones and skin removed
1/4 cup (20g) grated parmesan
1/4 cup (35g) plain flour
1 egg, lightly beaten
3/4 cup (50g) dry breadcrumbs
2 tablespoon olive oil
salad, lemon wedges, to serve
Method
1. Cook potato in a saucepan of boiling water, 15 minutes, until tender. Drain and return to pan on low heat, 2 minutes, until dry.
2. Remove potatoes from heat and mash lightly. Add butter and hot milk, beating until smooth. Set aside to cool completely.
3. Flake salmon into a bowl. Add potato and parmesan. Season, mix well and shape into eight patties. Place on a tray and chill, 1 hour.
4. Dust with flour. Brush with egg and coat with breadcrumbs.
5. Heat oil in a frying pan on medium. Cook patties, 3-5 minutes each side, until golden. Serve with salad and lemon wedges, if you like.
