Salmon patties

Method

1.Cook potato in a saucepan of boiling water, 15 minutes, until tender. Drain and return to pan on low heat, 2 minutes, until dry.
2.Remove potatoes from heat and mash lightly. Add butter and hot milk, beating until smooth. Set aside to cool completely.
3.Flake salmon into a bowl. Add potato and parmesan. Season, mix well and shape into eight patties. Place on a tray and chill, 1 hour.
4.Dust with flour. Brush with egg and coat with breadcrumbs.
5.Heat oil in a frying pan on medium. Cook patties, 3-5 minutes each side, until golden. Serve with salad and lemon wedges, if you like.
