Method
1.Place kumara in a saucepan; cover with cold water. Bring to the boil. Boil for 10 minutes or until tender. Drain. Transfer to a heatproof bowl; mash. Add salmon; mash until well combined. Stir in chive. Season. Cool slightly. Shape salmon mixture into 12 equal-sized patties. Press into breadcrumbs to coat.
2.Heat 2 tablespoons of the oil in a frying pan over moderately high heat. Cook patties, in batches, for 2 minutes or until browned. Transfer patties to sewing plates. Cover to keep warm.
3.Heat a wok or frying pan over high heat. Add remaining oil; swirl to coat surface. Add garlic, broccoli, beans and 1/4 cup water. Stir-fry for 2 minutes or until just tender. Season. Serve patties with vegetables, tartare sauce and lemon wedges.
Kumara is orange sweet potato. Cook patties the day before. Cover, then refrigerate.
