Ingredients: Creamy dressing; 1/2 cup (100g) mayonnaise; 2 tablespoon sour cream; 2 teaspoon white wine vinegar; 2 dessert apples, unpeeled, thinly sliced juice of 1/2 lemon; 4 celery stalks, thinly sliced on the diagonal; 1 cup frisee, endive or other salad greens; 2 teaspoon extra virgin olive oil; 1 teaspoon balsamic vinegar; 8 slices smoked salmon; crusty bread, to serve

2 dessert apples, unpeeled, thinly sliced juice of 1/2 lemon

4 celery stalks, thinly sliced on the diagonal

1 cup frisee, endive or other salad greens

2 teaspoon extra virgin olive oil

1 teaspoon balsamic vinegar

8 slices smoked salmon

crusty bread, to serve

Method

Creamy dressing

1.Combine ingredients and season to taste. Toss apple in lemon juice and toss with celery in dressing.

2.In a bowl, toss frisee with olive oil and balsamic vinegar.

3.Pile apple and celery mixture on four serving plates. Top with salmon slices and frisee. Serve with slices of crusty bread.

Crisp and sweet pink lady or fuji apples will taste great.
