Method
1.In a large saucepan of boiling salted water, cook pasta for 8 minutes or until tender. Drain.
2.Heat oil in a large deep frying pan over moderately high heat. Add capsicum and garlic; cook, stirring, for 3 minutes or until capsicum is tender. Add snow peas; cook, stirring, for 1 minute.
3.Using tongs, stir hot pasta into capsicum mixture with coriander and salmon. Serve topped with extra coriander.
Cook pasta a day ahead. Cool under cold running water; drain, then drizzle with a little oil to keep strands separate. Cover, then refrigerate.
