Salami and potato bake

Bursting with the flavours of salami, onion, spinach and cheese, this crispy, creamy potato bake is a perfect dinner. Just add a side salad, and you're all set!

Method

1.Preheat oven to moderate, 180°C. Lightly grease 4 x 1 1/2-cup shallow gratin dishes.
2.In a small jug, whisk cream and eggs. Season to taste.
3.Divide half potato slices among dishes. Top with salami, onion and spinach. Pour half cream mixture evenly between ramekins.
4.Top each evenly with remaining potato slices. Finish with remaining cream mixture. Sprinkle each with cheese and rosemary leaves.
5.Bake for 15-20 minutes, until golden and bubbly.

The cooking time will vary according to the depth of dishes you use. Deeper ramekins or pie dishes will take 5-10 minutes longer. Salad makes a lovely accompaniment to this bake.
