Method
1.Preheat an oven-grill to moderately high. Place muffins on a baking tray. Grill until lightly toasted on both sides.
2.Spread cut side of muffins with pesto. Top with capsicum, salami, olives and mozzarella. Grill for 3 minutes or until golden and cheese melts. Serve with salad leaves.
Swap olives for drained canned pineapple pieces as an after-school treat. You can buy thickly sliced Danish salami at the deli counter.
