1.Heat oil in saucepan over medium-high heat. Add garlic, rind, prawn heads and shells and cook for 10 minutes, until flavours infuse. Strain oil through sieve, pressing to extract flavor. Discard garlic, rind, heads and shells. Heat oil in same pan over high heat. Alternatively, divide oil between single-serve frying pans.
2.Cook haloumi for 2 minutes, until golden, Add prawns, tomato, chilli flakes and oregano. Cook for 3 to 4 minutes until prawns are just cooked.
3.Spoon into serving bowls and season serve with crusty bread.
