Method

1.Preheat oven to 200°C.
2.In a small bowl, combine butter, lemon zest, chilli and garlic. Season to taste and mix well. Rub chilli butter all over the skin of the chicken.
3.On the base of a large baking dish, arrange lemon slices and top with chicken, skin-side up. Pour combined lemon juice and water over chicken. Bake for 1 hour, basting regularly, or until juices run clear when a skewer is inserted into the thickest part of the thigh.
4.In a separate baking dish, place potatoes and pumpkin. Drizzle with olive oil and season to taste. Bake for 45-50 minutes, until golden and tender.
5.Serve chicken with potatoes and pumpkin, and drizzle with pan juices. Accompany with salad leaves.
