Method
1.Preheat oven to 180°C. Place chicken pieces, potatoes, lemon slices and sprigs of oregano in a large roasting pan. Drizzle with olive oil. Season to taste.
2.Roast for 40 minutes, turning occasionally, until chicken is cooked through and golden. Add olives for last 10 minutes of cooking. Serve with a green salad, if desired.
For extra flavour and colour, add a red capsicum, cut into thick strips, to potatoes.
