Method
1.Preheat oven to hot, 200°C (180°C fan-forced). Line 2 baking trays with baking paper. Place a wire rack on one baking tray.
2.Place beef on wire rack. Bake 50-55 minutes for medium, or until cooked to your liking. Remove beef from oven. Cover with foil; rest 5 minutes.
3.Meanwhile, cook potatoes according to packet instructions.
4.Place stroganoff recipe base in a small saucepan. Gradually whisk in cold water. Bring to the boil over high heat.
5.Add peppercorns. Reduce heat; simmer 5 minutes, or until thickened slightly. Stir in sour cream.
6.Serve sliced beef with potatoes, peppercorn sauce and vegetables.
Use a baking tray with a small lip to catch beef juices. Ready-marinated beef roasts are in most supermarkets.
