1.Preheat oven to 220°C. Grease two pizza pans or baking trays. Halve dough and roll out each piece to a 33cm x 22cm rectangle. Place on pans or trays.
2.Brush pizzas with 1 tablespoon of oil. Combine garlic and goat’s cheese in a bowl. Crumble over pizzas and top with ricotta. Season and drizzle with 1 tablespoon of remaining oil.
3.Bake for 15 minutes, swapping trays halfway through cooking, until pizza is browned and base is crisp. Top with rocket and drizzle with remaining oil. Serve immediately.
