1.Place stock, carrot, ginger, soy sauce and 2 cups water in a medium saucepan over high heat. Bring to the boil. Reduce heat, then simmer, uncovered, for 5-7 minutes or until carrot is tender.
2.Add noodles and wontons. Simmer for 5 minutes or until wontons are cooked. Stir in choy sum and pork. Simmer for 2-3 minutes or until pork is cooked.
3.Ladle soup into serving bowls. Serve sprinkled with onion.
Try thinly sliced chicken breast fillets instead of pork. Replace pork wontons with prawn or vegetable dumplings or wontons. Halve soup quantities if you have little freezer space.
