Method
1.Heat oil in a large frying pan on high. Sauté onion and garlic for 2 minutes, until onion is tender.
2.Add zucchini, eggplant and capsicum. Cook, stirring, for 2-3 minutes.
3.Blend in tomatoes, tomato paste and sugar. Season to taste. Simmer for 15 minutes.
4.Stir chickpeas and anchovies through. Simmer for 5 minutes. Stir in parsley. Serve with crusty bread.
This is delicious as a meal in itself, or you can serve it as a side dish.
