Ingredients

Method

1.Preheat oven to hot, 200°C. Line two oven trays with baking paper.
2.Arrange pumpkin in a single layer on trays. Season to taste. Bake 15-20 minutes, until pumpkin is tender. Transfer to paper towel and allow to cool.
3.Meanwhile, in a medium frying pan, melt butter on medium. Saute onion and garlic 3-4 minutes, until golden. Transfer to a medium bowl and add pumpkin, cheese and cayenne. Season to taste.
4.Layer 2 filo sheets, brushing each with extra butter and sprinkling with crumbs. Fold in half to make a square. Place quarter pumpkin mixture onto centre. Fold in sides and roll up. Arrange on trays and brush with butter. Repeat with remaining ingredients.
5.Bake 15-20 minutes, until golden and crisp. Serve with salad of choice.
