Method

1.In a large saucepan, combine chicken, onion, capsicum, sauce, vinegar, spice and salt. Pour in enough cold water to cover. Bring to boil on high. Reduce heat to low. Simmer uncovered for 25-30 minutes, until chicken is tender.
2.Remove chicken from sauce, cover, and set aside to cool. Continue cooking sauce for another 30 minutes, until it reduces and thickens. Strain sauce into a jug.
3.Shred cool chicken into a bowl. Add 1/3 cup sauce, tossing to coat.
4.Fill rolls with lettuce and chicken, top with a little extra sauce if liked.

This delicious chicken will become a favourite lunchtime treat for adults and kids. Add sliced tomatoes and mayonnaise, if liked.
