Method
1.Preheat oven to moderate, 180°C.
2.Heat a char-grill pan on high. Brush vegetables with oil. Grill in batches, 2-3 minutes each side, until golden and slightly tender.
3.Layer vegetables in a 26cm square oven proof dish. Scatter with olives and dots of goat’s cheese.
4.In a bowl, combine breadcrumbs, dried herbs and extra oil. Sprinkle over vegetables.
5.Bake 20-25 minutes, until golden and crisp. Serve with green salad.
