Prawn salad

1 kilogram cooked king prawns, shelled

7 cos lettuce leaves

Wine and chilli dressing

1/4 cup (60ml) fish sauce

1/3 cup (80ml) lemon juice

1 tablespoon brown sugar

1 medium fresh red chilli, chopped

1/4 cup (60ml) dry white wine

1 stem lemongrass, finely chopped

2 tablespoon chopped fresh coriander leaves

Method

1.To make dressing; combine all ingredients in bowl; mix well.

2.Combine prawns and dressing in bowl; cover, refrigerate several hours before serving. Serve salad over lettuce.
