Method

1.In a medium saucepan, melt butter on high heat. Add onion, garlic and curry powder, and cook 2-3 minutes, until onion is tender.
2.Stir in flour. Cook on high heat, stirring with a wooden spoon, for 1 minute. Remove from heat. Gradually mix in milk, until smooth.
3.Return to medium heat. Cook, stirring constantly, until sauce boils and thickens. Reduce heat to low and simmer 3 minutes.
4.Stir in prawns, chopped tomato, lemon juice, chilli sauce and brown sugar. Season to taste. Heat gently 2-3 minutes. Serve with steamed rice, coriander and pappadums.

If desired, replace cooked prawns with peeled and deveined green prawns. Cook for 3-5 minutes. Mixed yogurt and cucumber also makes a delicious accompaniment to this curry.
