1.Place potato in a large saucepan; cover with cold water. Bring to the boil. Boil for 10-12 minutes or until tender. Drain and slice.
2.Heat oil in a large frying pan over low heat. Add onion and garlic cook and stir for 10 minutes or until golden brown.
3.Grease and line base of a 20cm (base diameter) round springform pan with foil. Layer potato and onion in prepared pan, finishing with a layer of potato.
4.Preheat oven to 160°C (140°C fan-forced). Combine egg and thyme. Season with salt and pepper. Pour egg mixture over potato.
5.Using a small spatula, lift potato gently to distribute egg evenly through each layer. Sprinkle with paprika. Place springform pan on a baking tray.
6.Bake for 50-55 minutes or until just set when tested with a skewer. Cool in pan. Loosen edges with a spatula: remove from pan. Cut into wedges. Serve with salad.
