Method
1.Place potatoes in a saucepan of water. Bring to boil onhigh and cook, partially covered, for 8-10 minutes, until just tender. Drain well. Allow to cool.
2.In a large bowl, combine potatoes, tomatoes, parsley, mint and onions.
3.To make dressing, whisk together cream, mayonnaise, vinegar and mustard in a jug. Season to taste.
4.Drizzle dressing over salad, tossing gently. Serve salad topped with egg.
