Method

1.Place potatoes in a saucepan of water. Bring to boil on medium-high heat. Reduce heat to medium and simmer for 8-10 minutes, until tender. Cool and cut into 5mm slices.
2.Heat butter and oil in a large frying pan on high. Cook onion for 3-4 minutes, until softened. Add cumin, coriander and garlic and cook, stirring, for 1 minute, until fragrant.
3.Add potato and cook, stirring carefully, for 3 minutes, until heated through and coated in spices. Season.
4.Place 3 chapatis on work surface and scatter with half of cheese. Layer potato mixture evenly over top, then scatter with remaining cheese. Top with remaining 3 chapatis.
5.Heat a non-stick frying pan on medium. Spray with cooking oil. Cook one filled chapati for 1-2 minutes each side, until golden brown and cheese has melted. Transfer to a plate and keep warm.
6.Repeat with remaining chapatis. Cut into wedges, season and serve with chutney.
