Method

1.Place potato in a saucepan; cover with cold water. Bring to the boil; boil 10 minutes, or until tender. Drain; return to pan. Drizzle with oil; season.
2.Preheat a char-grill or barbecue plate to moderately high.
3.Cook potatoes and sausages, turning regularly, 8 minutes, or until golden and cooked. Transfer sausages to a plate. Cover with foil; rest 5 minutes. Thickly slice.
4.Combine cabbage, apple, onion, mayonnaise and juice in a large bowl; toss to combine. Add potato and walnuts; toss gently. Spoon onto serving plates. Serve with sausage.

Use a mandolin to slice the cabbage and apple thinly. If you don’t want to barbecue, you can pan-fry the sausages. Boil, steam or microwave potatoes until tender, then toss into salad with walnuts.
