Pork sausages with zucchini rosti

Originally from Switzerland, rosti means "crisp and golden" and although the dish is usually potato-based, this zucchini adaptation works a treat. Meanwhile, what's not to like about homemade pork sausages?

Ingredients

Method

1.Preheat oven to 180°C.
2.In a bowl, combine pork mince, apple, onion, lemon pepper and salt to taste. Divide mixture into 8 portions. Roll portions into 10cm-long sausage shapes. Coat in breadcrumbs.
3.Heat 2 teaspoons oil in a non-stick frying pan on medium. Add 4 sausages and cook for 4-5 minutes, turning, until browned on all sides. Transfer to an oven tray. Cook remaining sausages in frying pan, adding oil as required. Transfer to tray. Bake for 8-10 minutes or until cooked through.
4.Meanwhile, combine zucchini, flour and cheese in a bowl. Season to taste. Heat 2 tablespoons oil in same pan on medium. Spoon 2 tablespoonfuls of zucchini mixture into pan, flattening with a spatula. Cook for 2-3 minutes, or until golden. Turn and cook a further 1-2 minutes or until cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture.
5.Serve sausages with zucchini rosti and tomato chutney.
